Here’s a great finger-food recipe.
I used to serve a similar snack with cocktails in my restaurant
while guests waited for their meals to cook.

Chicken Wing Délice
Meat
600 g chicken wings (with bone), cut into fore wing, mid-wing, tip
For the Marinade
1 tablespoon rosemary infused oil
3 tablespoons Tamari (soy sauce without wheat)
2 teaspoons molasses sugar
1/2 teaspoon ground black pepper
1/2 teaspoon raw sea salt
1 thumb-size ginger root (remove skin, blitz or pounded to a pulp)/1 teaspoon organic ginger powder
3 thumb-size fresh tumeric root (remove skin, blitz or pounded to a pulp)/5 teaspoon organic tumeric power
How to:
Mix all the ingredients of the marinade together.
Mix it into the prepared chicken wing pieces. Best to leave to this overnight in the fridge for the flavours to get right into the meat.
To cook:
First Way: Shallow fry in animal fat, about 10 minutes on average until golden brown.Meat
Second Way: Steam for 15 minutes. (Put a tea towel over the steamer top to absorb the condensation)
ENJOY!
I like this with a glass of chilled crisp white wine like Pouilly Fume which is my favourite.
