The first secret…well, not really a secret, but here it is:
I changed my Mum’s diet to full-fat Dietary CHOLESTEROL. And this is one of the best things that happened to her, for it helped (among other things) turn her near-death sentence around.

I made this switch based on many things: my failed attempt at being vegan for 5 years when I became quite ill, weak, depressed and suicidal; my research into bad and good oils and fats; my observation of the dietary habits of different ethnic groups of people…Vegetarian Indians have a high incidence of death from cardiovascular disease (and other degenerative ones as well) and surprisingly, the French people have a markedly lower incidence of death from the same, despite their high consumption of cholesterol-rich foods.

In my restaurant, we only cooked with with real butter and goose fat. Pâté was made with 1/3 animal fat, 1/3 liver and 1/3 game or other rich meat. We cooked with the skin on the meat. We had lard dripping. Creme anglaise was made with real egg yolks and farm cream. There was no such thing as fat-free – it was cholesterol-rich full-fat all the way.

The change worked for my Mum, and she’s been on this cholesterol-rich diet for over 2 years now. She has 2 free-range farm soft-boiled eggs for breakfast everyday, with a dollop of butter added for good measure.
